Why don't we see more video pitches?

The more I think about it, the more I come to the conclusion that video pitches have a great future. Especially as an alternative to startup fund raising decks that now get emailed “cold” to potential investors. Why?

Other big applications could be job interviews, or university applications.

Totally agree with you! :)

I always thought that any good presenter should have 2 different versions of a presentation - a self-explanatory, probably longer/more text version which one can send before the meeting or post online, and an edited one for the actual meeting.

Video pitches would definitely be a few levels higher than the self-explanatory presentation! The only problem is sharing - videos are too large to send over email, and if the info is confidential, you can't exactly host it publicly online (unless you have a secure, private channel?).
